Commitment to Ingredients
Those who work with confectionery are often taught that “ingredients are everything.”
As we visit the production areas and speak with the farmers, we’re moved by the hidden hardships and thoughtful care behind the scenes—things we couldn’t have known without meeting them in person. It’s because of this meticulous effort that we get such distinctive aromas, textures, and flavors. With every visit, our love for the ingredients grows deeper.
Along the way, we began to wonder: is making delicious sweets the only mission of a confectioner? Perhaps it’s also our duty to convey the passion behind the ingredients to those who enjoy our sweets. This belief lies at the heart of Sekishuan.
Our goal is to craft refined wagashi. In our signature confection, the “Sekishuan Manju,” we have used the highest quality brown sugar from Hateruma Island in Okinawa since our founding. For the mochi rice, we blend “Miyakogane” from Toyama—known for its exceptional stickiness—with “Shiga Habutae Mochi,” prized for its fragrance and smoothness, to pursue a unique texture. The essential azuki beans used in wagashi are the finest "Erimoshouzu" variety, grown under contract in Tokachi, Hokkaido. The flavor of wagashi is defined by the ingredients. We seek out every possibility across Japan’s regions, carefully selecting only the most lovingly cultivated Japanese ingredients that meet our highest standards.
